This dish is perfectly suited for meal prepping. Just make one large batch of Kung Pao Chicken and eat for 2-4 days.
Ingredients:
For the marinade:
- 1 lb (450g) boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 1 tablespoon soy sauce
- 1 tablespoon rice wine
- 1 tablespoon cornstarch
For the sauce:
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar or regular vinegar
- 1 tablespoon sugar
- 1 cup of chicken broth
- 1 tablespoon of tomato paste
For the stir-fry:
- 2 tablespoons vegetable oil
- 1/2 cup unsalted peanuts
- 1/2 cup diced red bell pepper
- 1/2 cup diced green bell pepper
- 1/2 cup diced onion
- 3 cloves garlic, minced
- 1 teaspoon minced ginger
- 1/2 teaspoon red pepper flakes (adjust to taste)
Adjust the stir-fry vegetables according to your taste. Almost every type of vegetable works well. For this post, we made it with broccoli and carrots. Best served with rice.
